Sunflowers are one of the few major crops that are truly native to North America, domesticated by Indigenous peoples as early as 2300 B.C. — possibly even before corn, beans, and squash. Nearly every part of the plant was put to use: seeds roasted and ground into meal, petals turned into dye, and the whole plant used in traditional medicine. It took a detour through Russia, where sunflower oil became a Lenten kitchen staple, before the crop came roaring back to American fields in the 1960s.
